White tea is the most prized and delicate tea, harvested once a year, usually in Spring. They pluck only the youngest, finest leaves and buds that are gently dried and withered in the sun. No other process is done and so the natural antioxidants are retained and this tea type has very less caffeine content. It has a delicate aroma and the liquor can be a pale golden colour that tastes of sweet honey notes and lightly vegetal flavours.
