Green Tea is slightly processed and the oxidation process is halted by either steaming or firing the leaves. They are then rolled and dried . As the tea is unoxidized, the tea contains antioxidants and polyphenols. This tea has a sweet vegetal flavour and herbal aroma.
Darjeeling green tea is becoming very popular and is produced by many tea gardens in Darjeeling. Since the Darjeeling green tea is steamed to stop oxidation before it starts, most of the polyphenols are preserved and the Darjeeling green tea variant has about 60% more polyphenol content than other black teas.
